Turkey Mushroom Soup

Ingredients

2 tablespoons butter
2 cups sliced fresh mushrooms
1 (14-ounce) package frozen mirepoix blend (chopped onions, celery, carrots)
4 1/2 cups water
2 tablespoons beef bouillon granules
1/8 teaspoon black pepper
1/2 cup rice
1 1/2 cups chopped cooked turkey
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh thyme

Directions:

Melt butter over medium heat in a large saucepan. Add mushrooms and mirepoix blend; cook and stir until crisptender. Add water, bouillon, and pepper. Bring to a boil; stir in rice. Return to a boil; reduce heat. Simmer, uncovered, 10 minutes. Stir in turkey, parsley, and thyme; heat 10 minutes.
