Cream margarine and sugar. Add egg yolks. Blend in flour and salt. Add flavoring. Chill until firm enough to handle, about 2 hours. Pinch off pieces of dough with floured hands, insert cherry, and cover with the dough. Bake in 325° oven about 25 minutes, until lightly browned. When cool, ice with the following.
Icing:
Melt shortening, add juice and water, beat in salt and powdered sugar. Beat until spreading consistency. Spread on tops of cookies.
