Produce Yields
Unsure of how much produce to buy?
You certainly don't want more than your family can eat because then it will get old before you can enjoy it. Then, you don't want to underestimate because everyone needs a healthy dose of produce and you want enough to go around. The following guidelines will help you purchase just the amount of produce you need for fresh vegetable or fruit platters, family snacks, or main course salads.
Vegetable Yields
1 pound asparagus = 30 to 45 spears
1 large bell pepper = 24 (3 1/2 x ½-inch) strips
2 pounds broccoli or cauliflower = 32 (1-1/4-inch) flowerets
1 pound carrots = 65 (3 x 1/2-inch) sticks
4 medium celery stalks = 33 (4 x ½-inch) sticks
2 large cucumbers = 45 (4 x ¾-inch) sticks
1 pound mushrooms = 20 medium
4 ounces pea pods = 30
1 pound radishes = 40-50
3 medium zucchini = 35 (1/2-inch) slices
Yields for Salad Greens (torn into bite-sized pieces)
½ pound head of Boston lettuce = 6 cups
1-1/2 pound head iceberg lettuce = 12 cups
1-pound bunch leaf lettuce = 8 cups
1-1/2 pound bunch romaine lettuce = 12 cups
¾ pound spinach = 8 cups
1 ounce watercress = ½ cup
Yields for Fruit
1 pound apples = 3-4 medium, 4 cups sliced, pared
1 pound apricots = 5-8 whole, 10-16 halves
4 pound cantaloupe = 36 chunks
1 pound seedless grapes = 12 to 15 clusters
2 pound honeydew = 36 chunks
1 pound oranges = 30 to 40 sections
3-4 pound pineapple = 40 chunks
1 pound large strawberries = 20 to 25 berries
