Carb-Free Salmon Loaf
Dear Desi:
I have always tried to find new ways to lower the amount of carbs in various recipes. Joanna said her Salmon Loaf was like a Sloppy Joe. Here is a suggestions you might want to share with everyone:
In any loaf...salmon, meatloaf, etc. when you want to lower the carbs - instead of using crackers or bread crumbs try this....buy a bag of Pork Rinds. Check the bag to make sure that "0" zero carbs are listed on the package. Put the pork rinds in a plastic bag and crush with a rolling pin just as you would crackers - or you can do the same thing in your food processor.
Add these crumbs to the Salmon Loaf or meatloaf or whatever - it will add a great texture to your dish and you won't add a single carb!!!! Be sure you buy the plain variety, not seasoned...you won't be able to tell the difference between crackers or breadcrumbs.
