Save the Fat!
Dear Desi:
It's Summer and Grillin' time in Texas and we do lots of brisket here. I have learned that when you complete cooking a brisket and trim the fat off - SAVE THAT FAT! I put the pieces of fat through the meat grinder and put in small packages and freeze.
When getting ready for hamburgers - buy lean ground beef, add some of the brisket fat to your hamburgers, grill and enjoy. The fat from the brisket adds a great flavor - BUT MOST OF ALL...according to various medical resources the fat from the brisket improves the numbers of your GOOD CHOLESTEROL LEVELS...so add some brisket fat and get healthy!
