In anticipation of summer coming, I am looking to refresh my summer meal rotation. Typically, I’m excited to bring back my old favorites. Salads, grilling, and chilled pastas! But this year I am searching for some new material. A few new meals that will get me excited about cooking and even wanting to photograph my food- the true test of how good it is ;) So naturally, I’ve turned to Pinterest to help me fill in the calendar!

Ensalada Caprese is far and away my favorite salad. I could eat it every day until the day I die! This new take on it is a great way to transform that salad into a meal, keeping it light and friendly for summer! It is a base of seasoned chicken breast topped with mozzarella, avocado, tomatoes, balsamic glaze and basil ribbons! So delicious and beautiful!

Don’t these Hawaiian Chicken Teriyaki Bowls look delightful? I have gotten into quinoa bowls with veggies for lunch, so when I saw this Hawaiian bowl that looked like a fresh take on an old favorite to me! Its just chicken, zucchini, roasted bell peppers, pineapple spears, red onion and coconut flakes on top of coconut rice! It comes together quickly and this would be a great one to take on a picnic or even just eat in the front yard while the kids ride bikes!

This one definitely caught my eye while scrolling! I love wraps because they come along with me so nicely for a beach day or even a day at a kiddie amusement park! They often don’t require me to heat the house up, and this recipe looks like I could use a rotisserie chicken to eliminate that cooking step. It’s fresh, ethnic and helps me use up the huge pack of naan or pita bread I buy from Costco! I am always running a million directions during the summer, so having this meal in my arsenal will serve me well and save me from another drive through fast food!
