Easy, Peasy Guacamole
I’m sure I have mentioned before how much I love avocados. Avocados are so yummy and healthy for you. Avocados are rich in vitamins, healthy monounsaturated fats, and fiber. Did you know there is more potassium in an avocado than a banana? Avocados have been linked to heart health, cancer prevention, weight loss, lower cholesterol, and even improved vision. One thing I didn’t know about avocados is that eating them can help your body better absorb the nutrients from other plant foods. This is because of their high fat content, which helps “fat soluble” nutrients move from your digestive tract into your body where you need them.
One of my favorite ways to eat an avocado is in guacamole… And I always think of guacamole in May for Cinco de Mayo! I used to be intimidated by making homemade guacamole, until I realized how easy it is. Now I make it all the time. All you need is 3 ingredients: an avocado, your favorite salsa, and a little lime juice.
Easy, Peasy Guacamole
1 large, ripe avocado
4 tablespoons of your favorite salsa
1 tsp lime juice.
Directions: Cut your avocado in half. Remove the large pitt in the middle and peel off the skin. In a large bowl mash the avocado. (I use a fork to mash it.) Add 4 tablespoons of your favorite salsa. Add 1 teaspoon of lime juice. Stir in the salsa and lime juice until well mixed. That’s it! You’re done!
Guacamole is amazing served with tortilla chips, burritos, tacos, enchiladas, etc., but don’t limit your guacamole consumption to just Mexican night. I enjoy dipping veggies such as carrots, cucumbers, and celery in guacamole. It tastes delicious spread on sandwiches or burgers. You can mix it with tuna for a yummy tuna salad. It’s also great to eat at breakfast with your omelet.
It took me three tries, but my third child LOVES guacamole. She will eat a big scoop of it plain.
