Roast Beef with Horseradish Sauce

Serves: 8

3 pounds eye of round
1/2 teaspoon garlic, minced
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon pepper

HORSERADISH SAUCE:
1 cup sour cream
1/2 cup mayonnaise
1 teaspoon beef bouillon, crushed
1 tablespoon prepared horseradish, to taste


1. Combine all of the seasonings and rub into the entire roast. Place the roast into a slow cooker and cook on low for 8-10 hours.

2. Let the roast stand for about 10 minutes before slicing.

Sauce:

1. Combine all ingredients, mix well and chill. Serve with roast beef.
