Fabulous Fish Fillets
Serves 4
Ingredients:
4 swordfish, halibut, or salmon fillets, about 6 to 8 ounces each and 1 inch thickkosher salt
freshly ground black pepper
extra-virgin olive oil
1 lemon, cut into wedges (optional)
Season the fish fillets with salt and pepper and lightly brush or spray both sides with olive oil. Grill the fillets over Direct High heat until opaque in the center, 8 to 10 minutes, turning once halfway through grilling time (exception: grilling salmon fillets, see page 285***). Serve warm with lemon wedges, if desired.
