Tofu-Vegetable Stir-Fry
Serves 4
Ingredients:
1/2 pound firm tofu, drained and cubed2 tablespoons olive oil
1 cup carrot, sliced on the diagonal
2 cups chopped broccoli
1 cup sliced red, green or yellow bell pepper
1/2 cup chopped onion
2 teaspoons basil
1 1/2 tablespoons chopped garlic
1 cup sliced mushrooms
2 tablespoons soy sauce or tamari
1/4 cup sesame seeds
1. Sauté tofu in oil. Flip cubes once or twice to brown on a few sides, about 5 minutes.
2. Add carrots and mix then add broccoli, peppers, onions, basil, and garlic. Sauté about 3 minutes, mix, and add mushrooms.
3. Turn off heat, add soy sauce, and cover. Let steam for 1 or 2 minutes. Serve with rice or noodles and top with sesame seeds.
