Cheap and Neat Caramel Apples (Mini Style)

I did this one time with a class of 6th graders, and needless to say, it was a huge hit. They were fun and easy, and it worked well because it was less expensive than making regular caramel apples for everyone. It allows the children to decorate it themselves because it has the potential of being a little less messy. Another little plus: we discovered that you get more goodness with each bite! There's just more topping to apple ratio. Hoorah!
To start making this goodness, you will need:
Apples (you decide how much you need, but we got about 8 mini apples from one apple)
*Granny smith apples are probably best if you want the tartness
Melon baller
Toothpicks
Coating (this could be caramel, butterscotch chips, white-chocolate chips, peanut butter, etc.)
Toppings (graham crackers, sprinkles, cinnamon sugar, chocolate shavings, crushed cookie, etc.)
Wax paper
What you do:
Use the melon baller to carve out mini apples from each actual apple (once again, we got about 8). Stick a toothpick in each one, and then dip it in a coating of your choice (if you're doing this with a group, have a few options so they can be creative). Have bowls of toppings set out, and roll each coated apple in the desired topping. Allow to set up on the wax paper (or if you can't wait, just pop it right in. I understand, I'm right with you on that).
If you're using some sort of chocolate chip, melt small increments in the microwave at a time. It sets up fast and the more you reheat it, the more the quality diminishes. Learned that the hard way.
