Desserts to Die For:
Popcorn Cake (Not a Typo)
By Sydney Hill
Okay, popcorn and cake probably shouldn't be in the same compound word, let alone dessert, yet somehow it works. It's kind of like a large Rice Krispie treat, but with popcorn instead of Krispies. I choose this cake every year for my birthday. There are usually weird looks shot around the table as people see it for the first time, but then they take a bite and breathe a sigh of relief. It's very good (and yes, edible). I also like it because it's very versatile. You make it how you want it.
Popcorn Cake
Ingredients:
Enough popcorn to fill an angel food cake pan
1/2 cup margarine
1/4 cup oil
1 pound marshmallow
Desired mix-ins (1 cup salted cashews or peanuts, 3 cups gumdrops, 1 bag Swedish Fish candy)
Directions:
You can try forming this recipe into balls, as well.
Recipe formatted with the Cook'n Recipe Software from DVO Enterprises.
My favorite combination of mix-ins has been cashews with Swedish Fish. Try hot tamales, jelly beans (the Nerd's brand during Easter time especially), Mike and Ikes, Good and Plenty's, etc.) The chewy textured candies fit along perfectly.
Promise me not to condemn the cake until you try it.
Great for Holidays, too!
