ANSWER:
To merge Category 1 (let's call it Beef) with Category 2 (let's call it Chicken)

1. Click the first category (Beef)
2. Click on the first recipe in that category
3. Hold down the < Shift > key and click the last recipe in the category to select all of the recipes
4. Click on the list of selected recipes and drag them to the Chicken category and drop them to add all of the recipes to the Chicken category.
5. Delete the first category (Beef)
6. Rename the second category (Chicken) to something like "Meat Recipes."
