Italian Garden Salad and Dressing

This salad dressing is creamy, sweet and zesty all at once.

8 cups torn romaine
2 plum tomatoes, sliced
1 cup pitted ripe olives
1 cup Caesar salad croutons
1/2 medium red onion, cut into rings
1/2 cup shredded Parmesan cheese
1 small carrot, shredded
8 to 10 pepperoncini
DRESSING:
2/3 cup olive oil
2 tablespoons water
3 tablespoons white vinegar
2 tablespoons mayonnaise
1 envelope zesty Italian salad dressing mixes
2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/8 teaspoon cracked black pepper
Directions:
In a salad bowl, combine the first 8 ingredients. Whisk the dressing ingredients. Pour over salad and toss to coat. If desired, top with additional shredded Parmesan cheese and cracked black pepper. Serve immediately.
