Use a food grinder to prepare the filling. Grind one of the following cook meats—1/2 pound beef, veal, pork or ham very fine. Mix into the ground meat cooked spinach, finely chopped onion, the egg, salt and pepper. Set aside. Turn the heat off of the sauce.
To make pasta, add, in a large mixing bowl, in order: flour, salt, cooking oil, and eggs.
Mix all ingredients adding a little water for better control. Dough should be firm, but manageable.
On a floured board roll dough out to a thickness of less than a sixteenth of an inch. Cut.
NOTE: Wonton skins from your produce counter may be substituted.
Place 1 spoonful of filling on each square. Cover with second piece of thin pasta. Dampen edges of dough and press to seal. Let sit one hour.
While the ravioli is setting, prepare the sauce. In a large frying pan, heat butter and onion, garlic, tomatoes, salt, pepper, sugar, oregano. Cover and simmer for 20 minutes.
Cook the ravioli in large pan of boiling water with a little oil and salt until tender—about 40 minutes. Drain and arrange on a platter. Pour hot tomato sauce over the top and mix lightly. Sprinkle with freshly grated Parmesan cheese and serve immediately.
