Measure carefully, placing all ingredients except vegetable oil and additional sugar in bread machine pan in the order recommended by the manufacturer.
Select Dough/Manual cycle. Do not use delay cycles.
Remove dough from pan, using lightly floured hands. Cover and let rest 10 minutes on lightly floured surface.
Roll dough 3/8 inch thick on lightly floured board. Cut with floured doughnut cutter. Cover and let rise on board 35 to 45 minutes or until slightly raised.
Heat 2 to 3 inches oil in deep fryer or heavy Dutch oven to 375°. Fry 2 or 3 doughnuts at a time 2 to 3 minutes, turning as they rise to the surface, until golden brown. Remove from oil with long fork or slotted spoon. Drain on wire rack. Roll warm doughnuts in sugar.
1 doughnut: 185 calories (100 calories from fat) 11g fat (2g saturated) 10mg cholesterol 140mg sodium 19g carbohydrate (1g dietary fiber) 3g protein.
SUCCESS TIP
Use a deep-fat frying thermometer to be sure the oil temperature is correct. If the oil is too hot, the doughnuts will be golden brown but will not be cooked inside. If the oil is not hot enough, the doughnuts will absorb too much oil and be greasy.
Try This
If you don't have a doughnut cutter, you still can make great doughnuts. Roll the dough out into a rectangle until it is 3/8 inch think. Cut the dough into 20 squares. With your fingers, form a hole about an inch wide in the center of each square. The hole will help the doughnut fry evenly, so the center will not be undercooked and doughy. Try covering these square doughnuts with powdered sugar and a touch of cinnamon. Yum!
