Puree the tomatoes by rubbing on the coarse side of a cheese grater. Place in a bowl and thoroughly mix in the crushed garlic. Drizzle in the oil until a chunky consistency is reached, but do not over oil. Season with salt and pepper.
Cut bread into 1 1?2- to 2-inch slices and toast on both sides. Spread with tomato blend and add toppings, if using. Serve.
