Smothered and Covered Country Breakfast

Ingredients

5 pounds left over baked potatoes grated
3 medium onions chopped
1 pound Cheddar cheese grated
2 pounds breakfast sausages
salt and pepper to taste
6 to 8 cups Country Sausage Gravy

Directions:

Preheat a 16” Dutch oven with 2Tbs. oil and brown sausage and half of the onions. Remove sausage mixture and set aside. Add 3 Tbs. Butter and 2 Tbs. oil and add potatoes and remaining onions when butter melts. Spread potatoes and onions evenly and cook until browned. Flip over potatoes and cook second side. Top with sausage mixture then cheese. Finish by pouring gravy over the cheese and serve with hot sauce on the side.
