MEAT-
1/2 cup lean pork, minced
1/2 cup roast pork, diced
1/4 cup smoked ham, minced
2 or 3 bacon strips, minced
1 Chinese sausage, diced
1/2 cup beef, minced
1/2 cup chicken, minced
1/2 cup any leftover cooked meat, minced with 1 slice fresh ginger root
SEAFOOD-
1/2 cup cod fish, minced
1/2 cup clams, fresh or canned, minced (for the stock, substitute clam broth)
1/2 cup crabmeat, flaked
1/2 cup lobster, flaked
1/2 cup oysters, minced
1/2 cup shrimp (raw or cooked) , minced
2 or 3 dried scallops (soaked), shredded
4 to 6 dried shrimp (soaked), minced
VEGETABLES-
1/2 cup celery, chopped
1/2 cup fresh mushrooms, chopped
1/2 cup Chinese parsley, chopped
1/2 cup scallion stalks, chopped
1 cup spinach, chopped
1/2 cup water chestnuts, chopped
COMBINATIONS-
1/2 cup lean pork and 8 water chestnuts, both minced
1/4 cup lean pork and 1/2 cup raw shrimp, both minced
1/2 cup lean ham and 1/4 cup bamboo shoots, both diced
1/2 cup crabmeat, flaked and 3 dried scallops (soaked), shredded
10 raw oysters, 1/4 cup fat pork and 2 Spanish onions, minced. (Omit the oil and reduce stock to 3/4 cup.)
