Rinse trout with cold water pat fish dry, inside and out. Wrap one or two slices bacon around each fish, securing with wooden picks.
Spray cold grate with non-stick cooking spray or brush with oil. Place fish on grill about 4 inches above medium-hot coals. Cook for 6 to 8 minutes on each side or until trout flakes easily with a fork, is white and moist and bacon is done (do not over cook). Place on a heated platter.
Garnish with lemon or tomato and parsley.
