Cut off a thin slice from stem and bottom ends of both tomatoes discard ends or set aside for another use. Cut tomatoes crosswise into 3 slices, each about 3/4 -inch thick. Arrange slices in a single layer in a shallow 2-quart baking dish. Spread mayonnaise on top of each slice.
In a small bowl, combine croutons. Swiss cheese, olives, green pepper, dill weed and pepper. Spoon over tomatoes.
Broil 6 inches from heat source for 5 to 6 minutes or just until tomatoes are heated through, cheese melts and top begins to brown.
Garnish with parsley if desired. Serve immediately.
