Fry bacon until crisp drain and reserve fat. Keep prepared spinach at room temperature. In large bowl combine bacon, spinach, eggs, onion, Swiss cheese, and optional croutons. Blend mayonnaise, yogurt, lemon juice, mustard, nutmeg, salt, and pepper. Drizzle spinach mixture with 3 tablespoons reserved bacon fat add mayonnaise mixture and toss to coat.
