Preheat oven to 350°.
Crumble sausage into a 10-inch skillet. Brown over medium heat drain off fat. Spoon meat into a 9 x 9 x 2-inch or shallow 1 1/2 -quart baking dish set aside.
In skillet over medium heat, sauté green pepper, onion, and garlic in hot olive oil 5 minutes or until onion is crisp-tender. Stir in tomatoes, mushrooms, olives, basil, salt, and pepper remove from heat.
Meanwhile, spread mashed potatoes over meat, spreading to edges of dish and smoothing surface. Spoon sautéed vegetables over potatoes to within 1 inch of edge of dish. Sprinkle top with Parmesan cheese and parsley.
Bake 30 to 35 minutes until very hot and top is lightly browned.
*If you prefer, use ground beef. Sprinkle beef with 1/2 teaspoon salt and 1/4 teaspoon pepper before browning.
