Kolokithakia Yahni (herb sauteed squash)

Ingredients

2 pounds zucchini small, firm
1 onion medium size
1/4 cup butter
1 teaspoon sweet basil
1/2 teaspoon peppermint candy crushed
Fine grind black pepper to taste
Salt to taste

Directions:

Wash squash, trim off ends and cut into 1/2 inch rounds. Slice onion into very thin rings. Sauté squash and onion in butter sprinkle with salt, basil, peppermint and pepper. Cook until just tender. Serve at once.
