Rub the meat with salt and pepper. Place in a large bowl with onion, bay leaves and peppercorn. Heat vinegar and water, pour over meat. Cover and refrigerate for 3 or 4 days. Turn several times.
Remove meat. Brown in fat. Add onions and a small amount of marinade. Cover and cook in a 300° oven 3 to 4 hours or until meat is very tender.
Melt sugar in skillet. Add rest of marinade strained. Add raisins, ginger snaps and cook until thick and smooth. Serve in heated sauceboat with meat.
Sauerbraten is served with dumplings or boiled potatoes and red cabbage.
