Triticale Muffins

Ingredients

3/4 cup unbleached flour
1 1/4 cups triticale flour
4 teaspoons baking soda
3/4 teaspoon salt
5 tablespoons safflower oil
2 eggs
3 tablespoons honey
1 cup milk

Directions:

Heat oven to 425° F. Combine flours, baking soda, and salt. Blend in oil. Add eggs, honey, and milk until well-blended. Fill a well-greased muffin pan about 2/3 full. Bake for 10 to 12 minutes. Serve hot.

Note: For high altitude adjustment, use 2 1/2 to 3 teaspoons baking soda and fill muffin pan 1/2 full. Bake at 450° F for 10 to 12 minutes.
