When you plan a dinner for eight, you've moved into the large-dinner-party category. You can expect that there will be multiple conversations going on around the table, making it a little noisier and a bit more animated than smaller gatherings. As for spending time with each guest, that's rarely going to happen. This is a party, so just have fun and engage in the lively conversations going on around the table. Roasts, gratins, whole fish, and one-pot meals are perfect choices for eight or more. Not only will you have plenty of food, but these dishes are simple to prepare. The recipes in this section include a prized roasted pork shoulder and a rich, aromatic tagine, as well as my favorite dissert in the book, a Prune and Almond Tart. Enjoy!
