Mix together all the dry ingredients and cut in the shortening with a pastry cutter or use a couple of dinner forks. Add the buttermilk and the beaten eggs, and mix well. Add the diced apples to the batter.
For the topping use a pastry cutter to cut the butter into the flour and sugar, or use your fingers to work together. Sprinkle this on top of the batter before baking. Bake in a 12-inch Dutch oven and bake for an hour with 5-6 briquets underneath and 16-18 on the lid.
