Render fat from bacon in a large pot and mix in butter. Add green pepper, celery, and onion, and sauté until onion is translucent. Add garlic and spices and stir for 1 minute. Mix in flour and stir 5 minutes. Gradually add chicken stock and simmer 20 minutes. Add chicken, sausage, and okra and simmer 11–15 minutes. Add seafood and cook until just done. Add salt and Tabasco and adjust seasonings. Serve with cooked rice and garnish with parsley.
