Big Taste Tomato Basil Bisque

Ingredients

2 (10 3/4-ounce) cans tomato bisque
1 (14 1/2-ounce) can stewed tomatoes with basil and garlic, undrained
1 tablespoon chopped fresh basil leaves (optional)
1/2 - 1 cup fat free half and half
salt and pepper to taste

Directions:

In a medium saucepot, combine tomato bisque and stewed tomatoes with juice (purée tomatoes first if you like a smoother-textured soup). Simmer over medium heat for 10 minutes; add fresh chopped basil leaves and simmer a few minutes more. Whisk in half-and-half until soup has desired creaminess. Season to taste.
