Layer 1/2 of tortilla quarters in a lightly greased 13"x9" baking dish; set aside. Combine beef, salsa, tomato sauce and taco seasoning; layer half over tortillas. In a separate bowl, combine cottage cheese, oregano and eggs; layer over beef mixture. Spread remaining beef mixture on top; layer remaining tortilla quarters over beef mixture. Sprinkle with mozzarella cheese; bake at 375 degrees for 30 minutes, or until hot and bubbly.
Tip: A fun new way to serve cornbread...mix up the batter, thin it slightly with a little extra milk, then bake until crisp in a waffle iron.
