Beef & Creamed Corn

Ingredients

1 pound ground beef
1/2 cup onion (chopped)
1/3 cup bell pepper (chopped)
1 (6-ounce) can tomato paste
1/2 cup water
1/2 teaspoon salt
8 ounces cream cheese (softened)
1 egg
1 (8 3/4-ounce) can cream-style corn
1/2 cup cornmeal
1/2 cup flour
2 teaspoons baking powder
1/3 cup milk
2 tablespoons butter (melted)
1 egg
paprika for sprinkling

Directions:

In large skillet brown ground beef, add onion and bell pepper. Cook until tender. Stir in tomato paste, water and salt. Simmer for 5 minutes. Spoon into a greased 1 1/2 quart pan.

Combine softened cream cheese and 1 egg, mixing until well-blended. Add creamed corn. Mix lightly. Spread over meat mixture.

Combine dry ingredients then add milk, butter and 1 egg, mix until moistened. Spread over cream cheese mixture. Sprinkle with paprika.

Bake at 400 degrees for 30 - 35 minutes. Let stand about 5 minutes before serving.
