Cook rice according to package directions. Set aside.
In large skillet add butter; add onion and mushrooms and saute over medium heat, about 5 - 7 minutes; stir in tomatoes and cook together about 5 minutes. Add cooked rice, salt and pepper and mix thoroughly.
Pour mixture into a greased 8 x 8 inch pan. Spread Cheddar cheese on top.
Bake at 350 degrees for 35 minutes.
