Traditional pizza recipes often specify fresh, very ripe tomatoes. In some places, however, these can often be hard to come by, especially in the winter. Peeled tomatoes in a can provide a good and time-saving alternative if drained before use. We like to heat the tomatoes in a saucepan before putting them on the pizza. You can also make a sauce adding fried onions, chopped tomatoes, tomato paste, and oregano or basil. Sautéed garlic is also a yummy addition. Be creative. In our family we do a little of everything depending on who the pizza is for. Pizza and movie night with the kids and their friends is always a fun thing to do.
