1 Place the potatoes in a medium saucepan and add cold water to cover and salt to taste. Cover and bring to a simmer over medium heat. Cook until the potatoes are tender when pierced with a knife, about 20 minutes. Drain well. Let cool slightly. Peel the potatoes and cut into 1/4-inch slices.
2 Bring another large saucepan of water to a boil. Add the green beans and salt to taste. Cook the beans until they are tender, about 8 minutes. Drain the beans and cool them under running water. Drain and pat dry. Cut the beans into bitesize pieces.
3 In a large bowl, whisk together the oil, vinegar, herbs, and salt and pepper to taste. Add the potatoes, beans, and onion and toss well. Taste and adjust seasoning. Serve immediately.
