Mix cucumber, yogurt, dill, parsley, green onions, and lemon zest in a bowl and set aside. Arrange mahi mahi on a plate with thickest portions to the outside. Drizzle with lemon juice. Cover with plastic; vent at one corner. Microwave on High for 4 - 5 minutes until thickest portion is just opaque. Rearrange fish once. If fish is thick, it may need more cooking time. Check frequently, about every 20 seconds, to avoid overcooking. Let stand 5 minutes to finish cooking. Drain. Serve room-temperature yogurt sauce on top of fish.
