Shorty’s Beer Batter Shrimp Poor Boys

Ingredients

1 cup beer
1 cup cake flour
1 teaspoon salt
1 teaspoon cayenne pepper
1 pound uncooked extra large shrimp, peeled, deveined
1 canola oil for deep-driving
4 French rolls, split toasted
1 cup shredded iceberg lettuce
1 ripe tomato, thinly sliced

Horseradish Spread:
1 cup mayonnaise
2 tablespoons fresh lemon juice
1/4 cup prepared horseradish
2 garlic cloves, minced

Directions:

Combine beer, cake flour, salt, and cayenne pepper. Cover shrimp in batter. Heat oil in deep-fryer to 325°. Fry shrimp until golden. Transfer shrimp to paper towels and drain. Slather rolls with Horseradish Spread. Layer bottom half of rolls with lettuce, tomato, and shrimp. Top with upper half of rolls.

Horseradish Spread:
Combine well and slather rolls with spread.


Fun Fact: Trout are the state fish of Colorado, Nevada, and Utah. Colorado’s Greenback cutthroat trout is found east of the Continental Divide in the cold, clear foothill and mountain waters. It is now an endangered species. Nevada’s Lahontan Cutthroat Trout, a native trout found in fourteen of the state’s seventeen counties, has adapted to habitats ranging from high mountain creeks and alpine lakes to warm, intermittent lowland streams and alkaline lakes where no other trout can live. Utah’s Bonneville cutthroat trout is a species native to tributaries of the Great Salt Lake. They are descended from cutthroat trout hat once inhabited the Lake Bonneville, but moved upstream due to loss of habitat.
