Dice celery, mushrooms, and onion, and lightly fry in butter. Add bread crumbs or bread, salt, granulated garlic, and lemon juice or juice of 1/2 lemon. Add eggs; mix and add water until you have the consistency of stuffing. You may add crayfish to the stuffing for a really nice accent, if desired.
Fill trout or salmon cavity with stuffing; truss if necessary. Baste fish with melted butter and lemon juice and grill, basting occasionally, till done (be sure to oil grate before placing). Be careful turning fish over.
