Yield: About 1/2 Cup
1. Place 1 tablespoon of the olive oil, 1 tablespoon of the vinegar, and all of the sugar, salt, paprika, and dry mustard in a small bowl, and whisk until smooth.
2. Add another 2 tablespoons of olive oil to the mixture, and whisk again until smooth.
3. Add all of the remaining olive oil and vinegar, and whisk well to combine.
4. Transfer the dressing to a jar, drop in the garlic if desired, and shake well. Use immediately, or refrigerate until ready to serve. Unless you really fancy garlic, remove it after a few days. Bring to room temperature and shake thoroughly before serving.
