Olive Oil-Roasted Potatoes

Ingredients

3 large baking potatoes such as russets
2 tablespoons olive oil

Directions:

1. Peel the potatoes and cut them into chunks. Place them in a large bowl, drizzle with the olive oil, and toss to coat.

2. Arrange the potatoes in a single layer on a shallow baking pan, and bake in a preheated 350°F oven for about 50 minutes, or until the potatoes are easily pierced with a fork. Serve hot.
