1. Prepare the head of garlic by cutting a slice off the top. Be sure to shear a bit off the top of each individual clove so that all are exposed.
2. Place the garlic cut-side up in the middle of a square of aluminum foil, and drizzle with the olive oil. Then bring the 4 corners of the foil together at the top, and twist to completely enclose the garlic.
3. Place the garlic directly on the oven rack of a preheated 275°F oven, and roast for 45 minutes to an hour, or until soft to the touch when gently squeezed. Remove the garlic from the oven and allow it to cool.
4. To use immediately, just turn the head of garlic upside down and squeeze. The individual cloves will pop right out. Spread the garlic on crusty bread, or use in any recipe calling for garlic. To store, squeeze the cloves into a very small container, cover with a little olive oil, and snap on the cover. Your roasted garlic will be ready when you are, and it will wait indefinitely. Whenever you use the garlic—or the oil, which will quickly become infused with the garlic flavor—top it off with enough olive oil to cover. Do not refrigerate.
