Roasted Green Beans

Ingredients

1 pound fresh green beans
1 tablespoon olive oil
1 clove garlic minced
1 teaspoon crushed dried oregano
1 teaspoon salt
cracked pepper to taste
juice of 1/2 lemon
TOPPING
1/4 cup unflavored bread crumbs
1 teaspoon olive oil
1/8 teaspoon garlic salt
2-3 tablespoons shaved Romano cheese (optional)

Directions:

1. Wash the beans and snip off the ends. Pat dry.

2. Place the olive oil, garlic, oregano, salt, and pepper in a large bowl, and stir to mix. Add the beans and toss to coat.

3. Arrange the beans in a single layer on a shallow baking pan, and bake in a preheated 400°F oven for 10 minutes. Stir, sprinkle with the lemon juice, and return to the oven for an additional 10 minutes, or until the beans are tender-crisp when pierced with the tip of a knife.

4. While the beans are roasting, prepare the topping by combining the crumbs, olive oil, and garlic salt in a small bowl. Sprinkle the crumbs over the top of the cooked beans, add a sprinkling of cheese if desired, and serve immediately.
