key lime mousse

Ingredients

3/4 cup mashed avocado (1 1/2 avocados)
1/4 cup agave nectar or maple syrup
2 tablespoons freshly squeezed lime juice
Sliced kiwifruit or fresh berries or a combination, for garnish

Directions:

citrus juicer or reamer

food processor
rubber spatula
cutting board
paring knife

Put the avocados, agave nectar, and lime juice in a food processor fitted with the S blade and process until smooth, stopping occasionally to scrape down the work bowl with a rubber spatula. Garnish with kiwifruit. Serve immediately.

Note: To make a double batch, increase the amounts to 11/2 cups of mashed avocados (3 avocados), 1/2 cup of agave nectar, and 1/4 cup of freshly squeezed lime juice. Yield: 2 cups, 4 servings.

Key Lime Sherbet: Put the Key Lime Mousse in the freezer for at least 4 hours. Thaw for 15 minutes before serving.

Lemon Mousse: Replace the lime juice with 2 tablespoons of freshly squeezed lemon juice.
