• Grind the chopped dates and part of the soymilk or milk together in a blender or food processor until the dates are well ground. Add the rest of the milk and the other ingredients, and blend until creamy. Use the pulse button at first, keeping the sides scraped down.
NOTE: You may use a food processor. It’s difficult to grind dates well in a blender. It helps to soften the chopped dates first in a little hot water for about 10 minutes. If you use the soak water in the shakes, cut back on the milk.
VARIATION: Use 1 1/2 cups Vanilla Ice Cream instead of tofu.
