• Peel and slice the ginger. Slice the lemon or lime into 1/4-inch circles. Place the ginger and citrus in the water in a pan, and simmer for 20 to 30 minutes.
• Strain the liquid into a glass jar or other container. Stir in the stevia extract to taste and refrigerate.
• To serve, pour about equal amounts of the ginger water and chilled sparkling water into a glass. If using lemon or lime flavored sparkling water, omit simmering the lemon or lime slices with the ginger.
NOTE: Simmer only! Do not bring ginger to a boil because it will become bitter.
OPTION: Add several stevia herbal tea bags during the last 10 minutes of simmering instead of using the stevia extract.
