Turn toaster oven to bake at 375 degrees.
Preheat a 9-inch square baking pan for 20 minutes. Pour oil in pan. Scatter onion, garlic, and bell pepper on top.
Toss spinach with a little salt, pepper, and nutmeg. Sprinkle spinach mixture on top. In a bowl, whisk together eggs, cream, and Parmesan cheese. Pour egg mixture over spinach mixture. Sprinkle feta cheese on top, pressing into egg mixture. Bake 35–40 minutes, or until lightly browned on top. Makes 4–6 servings.
