Turn toaster oven to convection bake at 375 degrees (or bake at 400 degrees).
Saute the onions and chile in butter over medium-high heat for 3–5 minutes until softened. Stir in beans and corn and then remove from heat. Stir in cheese and spices.
Spoon 1?2 cup of the mixture onto each tortilla and then roll up, burrito style. Place in a single layer on an 8 x 11-inch baking sheet prepared with nonstick cooking spray. Generously spray each tortilla bundle with oil. Bake for 20–25 minutes, or until golden brown. Makes 6 servings.
