Turn toaster oven to convection bake at 400 degrees (or bake at 425 degrees).
Place a 2-quart baking pan in the oven and heat for 10 minutes.
Meanwhile, grate the potato on the large holes of a box grater. Toss the grated potato with 1 tablespoon oil, salt, and pepper.
Remove pan from toaster oven and pour in remaining oil. Spread potato mixture in pan and then cover with aluminum foil.
Bake for 15 minutes. Remove pan, uncover, and return to oven and bake 5–8 minutes more, or until tops of potatoes begin to brown. Serve immediately. Makes 4 servings.
