1. Cook sausage in 1 1/2-quart saucepan over medium heat, stirring frequently, until brown. Remove sausage and reserve. Drain fat from saucepan, reserving 2 tablespoons in saucepan.
2. Cook rice, celery, bell pepper, onion and garlic in fat in saucepan over medium-high heat about 6 minutes, stirring frequently, until rice is light brown.
3. Stir in tomatoes, tomato sauce, water, thyme, red pepper, salt and bay leaf. Heat to boiling reduce heat to low. Cover and simmer about 20 minutes, stirring frequently, just until rice is tender. Stir in sausage and ham. Cover and simmer just until ham is hot. Remove bay leaf. Sprinkle with parsley.
