Silken Spinach

Ingredients

1 tablespoon olive oil
1 small onion chopped
1 (10-ounce) package fresh spinach chopped
1 (12 1/2-ounce) package firm silken tofu
3 to 4 tablespoons yellow miso to taste
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/3 to 1/2 cup chopped pecans

Directions:

1. Heat the oil in a large heavy kettle over medium-low heat. Add the onion, saute a few minutes, then add the spinach. Cover and cook, stirring occasionally, for 2 to 3 minutes or until the spinach is tender.
2. Place the tofu and miso in a blender or food processor, and blend until smooth and creamy. (If the mixture is too thick, add a tablespoon or so of water.)
3. Add the tofu mixture, basil, and oregano to the cooked spinach. Stir the ingredients and heat up, but do not cook.
4. Transfer the spinach to a serving bowl, top with chopped nuts, and serve.
